Antioxidant Carrot Salad

3 carrots, julienned
1/2 cup unsweetened cranberries
1 cup shredded Napa or thinly sliced green cabbage
l/4 cup pumpkin seeds
l cup zucchini, julienned
2 cups organic green lettuce 

Dressing:

2 cloves garlic, crushed
l/4 cup extra virgin olive oil
1 Tbsp. coconut marinate

Toss the salad with the crushed garlic. Add the olive oil and coconut marinate. Then toss them all the ingredients together.
