Cheers with Dairy-Free Horchata… Mexican-rice drink
The true origin about Horchata (Rice drink) in Mexico is not well known. The true is that horchata is a traditional drink made out of rice and milk. Many people are lactose or casein intolerant, so I have modified this recipe to make it nutritious for everybody to enjoy!
Rice is a staple food for many culture including Mexican cuisine. Amoung the benefits of rice are:
- Rice is good source of fiber and does not contain harmful fats, cholesterol or sodium
- Rice is considered one of the best foods for those suffering from high blood pressure and hypertension for its low content in sodium
- Rice is one of the most stable grains which barely people is reactive or allergic to
- Whole grain rice like brown rice is rich in insoluble fiber that can protect against many types of cancer.
(Mexican Rice Drink)
1 Cup cooked organic basmati rice (cook rice with water only)
1 liter of coconut or almond milk
1 Tbsp. organic vanilla extract
1/2 tsp cinnamon powder
Stevia, raw honey or agave syrup to taste (optional)
Blend all ingredients in a power blender except for the ice cubes. Place in a jar and add the ice cubes. Enjoy!
