Why I love my greens?

ORANGE SESAME TOSSED KALE

(Serves 2)

 kale with oranges

Ingredients:

3 Tbsp. un-hulled sesame seeds, toasted*, divided

12 raw cashew nuts

½ cup orange juice

2 Tbsp seasoned rice vinegar or apple cider vinegar

1 ½ Tablespoon of nutritional yeast

2 oranges, peeled and diced

1 bunch of kale

In a high powered blender, blend 2 tablespoons sesame seeds, cashews, orange juice, and vinegar until creamy and smooth. Add additional orange juice to thin if necessary.

Combine diced oranges with kale and toss with dressing.

Sprinkle the remaining sesame seeds on top.

*Lightly toast the sesame seeds in a pan over medium heat for 3 minutes shaking the pan frequently.
